Class Cakes: Birthday Cake

During the last month in my cake decorating class we have been doing  different cakes, focusing on different techniques. On this cake we focused on piping, we practiced chocolate writing, drop flowers, and cornelli lace (the squiggly pattern). I had to incorporate all of these techniques into one cake.  Here is a picture of my cake:

There is a piece cut out of it because my teacher checked every ones layer to make sure the cake and filling was even.  When you are building a cake you bake layers, after they are done you have to level off the round top, then tort (cut the layer in half or thirds, depending on the eight of the layer) the cake. For this cake we baked one layer and torted it once, then filled it with butter cream. I think this cake turned out pretty good, my teacher really liked it. Here are some more pictures:

Kristina's Wedding

This weekend I made and cake and catered a reception. For the dinner made a taco bar, with shredded beef and chicken with all the fixings and fruit and vegetable platters. The cake was fake except for the top, it was covered in French butter cream and the flower is fondant and gum paste.

I just finished  wedding cake this weekend. I think it turned out pretty good. It was a lemon cake with Swiss Butter cream. The roses are butter cream and so are the black dots. So here is is:

I have another wedding coming up next week, so I will post those when I get done.

Cakes

I have done a couple of cake in the past few months, first was a wedding cake for our friends. It was my first wedding cake, it was covered in buttercream and had fondant polka dots.

I only got pictures before it was assembled so there they are (please pardon my freezer and fridge):

It was four tiers, and we had two extra ones for serving. They had it cut up and served to everyone at the reception.

Next I made a birthday cake for my nephew who turned 5. My sister let me borrow her caterpillar cupcake pan. I think it turned out pretty cute.

Next I made a baby shower cake for a friends sister, she wanted a small cake and cupcakes. the colors were blue, brown, and cream.

The last cake I for my niece who just turned 3. She loves princesses so she asked for a princess castle cake, so that is what we did.

She loved it, she kept standing on her chair during dinner to look at it.

So that is what I have been up to the past few months, this week I will be baking Christmas goodies. I will try to put up some of my favorites with their recipes.

Chocolate Pear Galette

A galette is kind of like a pie but it is just not baked in a pie pan. The ingredients are put in the center of the rolled out crust and the edges are folded over and then it is baked on a cookie sheet. It was delicious!

Rachel's Sweet 16 Cake

Okay, here it is finally! The bottom tier is chocolate cake with a chocolate buttercream filling and the top tier is a white cake with chocolate buttercream filling. It is frosted in the white chocolate italian buttercream from the cupcake post. I made all the decorations from the Wilton Candy melts. I think it turned out really cute! So without further adieu here it is:
